Deer roasts that have been smoked are great. Slow cooked over low heat with a glaze on the meat smoked on the exterior keeps the meat nice and juicy. The meat is especially good if the deer hasn't been run by dogs before it was taken down.

With just a little time and ingenuity we could smoke a whole deer.
